Simply
called “Cambodia Khmer noodles”, Nom banh chock is a typical Cambodia
breakfast food. Cambodia is full of crowd
markets and hospitable street vendors. Thus, find new experiences by
buying it from pitchers and enjoy on the streets to see the “wheel” of
long-lasting city in the pure early morning. The yelling of vendors amidst the noisy
city takes you back to the taciturn atmosphere of tranquil villages.
The dish
consists of noodles pounded out of rice
and fish-based green sauce made from lemongrass and turmeric roots. Don’t
forget to try it with cucumbers, green
beans, mint leaves and bean sprouts. Khmer noddles are created by both fresh

Ingredients
· half of a chicken
·
3-5 catfish
fillets
·
fermented fish
paste
·
½ cup of fish
sauce
·
a half of litter
coconut milk
·
1 cup of chopped
lemon grass (can buy frozen if fresh is unavailable)
·
5-10 cloves of
garlic
·
turmeric powder
·
salt
·
sugar
·
fresh chili
pepper
·
vermicelli noodles
·
vegetables (bean
sprouts, green papaya, cucumber, long bean, and anything you want to add)

quarters full of water in a pot, boil them and submerge a half of chicken to cook. When the chicken is fully cooked, pick it up outside the pot and let it cool down. Do it
similarly with catfish fillets. DO NOT dump it in the broth.
After
chicken and catfish filters cool, handle shred them together into small pieces
to grind by blender. What to do with lemongrass, garlic and rhizome? Chop them
and grind in the blender. To get blender go easily, add a little cold water.
Finally, add turmeric powder to avoid staining the soup.
Cooking the noodles and prepare the vegetable
Boil
water, add noodles then sluice with cold water. Separate noodles into bunches and put it into a basket. If not, it will be soft and can’t
absorb the flavors well. Then, wash the vegetables to have a delicious bowl of Cambodia Khmer noodles. Strictly do
the following steps: vegetables, noodles and soup topped with the ground chili
and salt mixture in the bowl.
